Do the officials specifically ask and count for the cash carreied by us during landing?
do we have to valuate the gold by some authorised gold smith? should we not have any thing like that can we carry our gold with us next time around?

The immigration officers are very friendly and will be very helpful to you.
Many a times they will ask you about the settlement amount you are carrying and make a record of the same.
You cannot carry CASH beyond CAD 10,000. I would not suggest you to carry much cash. You should carry either TC's or other form of exchange. I carried a Bankers Cheque from India and showed it to the immigration officer and sent the cheque back to India into my account by courier the very NEXT day.
I started working the very same day I landed here in Canada.
In regards to the Gold, I suggest you should carry the original receipts with you along with the purity certificates and make a consolidated list of all the gold carried by you and stamp it at the point of entry. This way you can avoid interrogations during your subsequent trips to India.
I suggest you should make a list of all the investments, property information on your name and get it stamped at the port of entry so that if you want to transfer monies from India later(for a downpayment on new home) you will avoid unnecessary queries and also taxation.
My info is nearly 7 years old and may be a recent immigrant can give you a better information on this thread.
