1. The flour is first thrown on a dirty floor in a slum.
2. Dirty water in filthy containers , usually filled from public toilets/latrines is mixed with the flour/dough.
3. Dirty workers wearing half pants and sweating , knead this Dough ..with their bare FEET !!
4. The chutneys and pani are also made with the same filthy dirty water. Its raw water, so its NEVER been boiled.
5. All the utensils etc are never washed or cleaned properly.
6. So even if he is wearing gloves etc when serving you ..the basic pani and the puri is dirty to begin with, so taht's NOT going to change by wearing gloves, just while serving you
Like I said there's being cautious and then there's being obsessive ...
You guys are obsessed about something which may not be happening in most of the places ...
You have still not answered my q - Have you never eaten out in India or consumed sweets when in India ??
More than any of these low possible violations , it is the food quality itself which is a health perpetrator in India .... a reason why there are more food related issues during the monsoons .
You will be surprised that even here some times you find stale and unhygienic food and conditions ... experienced personally once @ a Desi restaurant and another time @ Harvey's , Bracebridge.
But that does not mean that everywhere it is like that .... For those who are obsessed they may wish to stop eating here also !!!

I was in asian shop..saw one educated lady , later speaking posh english at counter, walked by the aisle where nuts were placed in containers along with the scoop. She dips her bare hand deep into a full container , brings out the fist full of almonds , and pops one straight down the throat , walks along, popping remaining one after another .... thats in Canada.. you must have bought almonds from asian shops?

We also have Haldiram's / Sarvanna / Ratnam's etc outlets and even hygienic local food vendors, my experience is that India has two sides. The world I live in I do have access to hygienic food and wish the other side is also have access to similar standards.
As TK had pointed out about Amma canteens, I have been there in Chennai and it was clean and food preparation is hygienic there.
I dont really care when its comes to street food ... I enjoy street food , Bery Bery Tasty
Trick is not to look at their kitchen or them ... just see the amazing food and enjoy
Yes, i go mostly to known stall but i would not mind if i m on vacation to other place and i see good street stall i will go for it

In known areas and cities , I would frequent places w/o a care that I have been frequenting for a long time and have known in the market to be good and popular ... and they are every where ...If they are doing food business for 15-20 years (w/o any known incidents) and you have known them / seen them , they can be relied upon.
In new cities or near bus stands / railway stations , I would rather go to some Govt operated canteen or cafe as they are required to follow some standards ...
Poop cases may be one in a million , so it is obsessive to generalize them ... my concern would be stale or inferior ingredients being used more than anything else .... stale vegetables , over smoking inferior oil and the like - to avoid this I would not mind paying a little extra and visiting accredited joints.
For those who are willing and looking for street food in slums , well its their choice
