If a child is born outside of Canada, in India:
1) as per, CIC website, child will be considered Canadian citizen as long as one of the parents is Canadian citizen.
But how to get citizenship for child in this kind of case? documentation, processing times any other consideration?!!
2) will OHIP provide health coverage during pregnancy and delivery? Does employer-provided health insurance usually cover these kind of expenses?
3) What about EI?

1) You contact the Canadian High Commission in India (in your Case) with a birth certificate, which will contain the two names as exactly you see in your Passports and inform them that a child is born, who is of Canadian Origin, there in India with all of the pertaining details. Maintain all of the hospital records for the future use. And do it properly and fast and thorough. (Get a form from them)
Yes, you can obtain a Passport through them for the child, initially for a one year period. (Or there abouts). They will tell you more about it. It costs peanuts.
Generally OHIP coverage out side of the country is minimal. You can see their website and also retain your receipts (ORIGINAL) for reimbursement. Most of the Private Health coverage in Canada is more or less a top up on (top of) the OHIP. So, if the OHIP gives you a buck, then they will say you got what is coming to you. You have no claims over and above that payment. BUT, there is always a but, your Employer might have paid for a lot of coverage which their policies will state in it and you will have to approach your Employer's Human Resources department and collect all or most of it, but not from both. (OHIP and Private Insurance) It is a matter that you take up with your employer. You are saying here that you don't know about your own company coverage. How can one provide a link to an insurance company website without knowing who they are and what kind of coverage you have with them. That is a very tall order.
Now what about EI.? We still have EI here. When you come back you can surely get into it and enjoy the Maternity benefits, if you have enough number of hours into it. It might have been 900 hours before, but the ceiling has been dropped down and some are on the list are collecting even after their expiry of the payment period, thanks to a few twisting of the arms and rule changes. (I remember a thread on CD)
I would urge you to spend a few rupees and contact some of your good buddies at work and discuss this with them in detail and delve a little deeper into it. Ask about people who were in similar or close situations like yours and jot down the details and progress slowly before you arrive here.
Let the Mother and the Kid spend 'enough time' there, till they are ready for the travel. Then again see a good Doctor and complete the full courses of immunization and then get a clean bill of health before they start on the trip. And if you ask me, you get back home and bring them with you after all of the processing.
