Hello,
Me and my boyfriend are 2 international students. We are planning to get married soon and thinking to change his visa status from student to spouse visa so he could work. He is currently enrolled in an ESL program (I am a full-time student). Will he able to study part-time once his status is changed?

Once he changes his status to work permit ... he will not be able to attend a registered school officially. He can always take ESL classes while working as long as they do not constitute any long term program which requires study permit.
The suggestion is .... after getting work permit ... let him find a skilled job so that after one year of work you both can file for Permanent Residency under Canadian Experience Class.

The Canadian Immigration does not normally provide a work permit, willy nilly to any one. You cannot work anywhere without an approval. If your BF has any skills that are currently in demand and he can get an LMO, then he stands a chance to stay within Canada.
If you both lived together in one residence as man and wife, in a common law relationship for an year or more, then, he can quit his school and claim to stay within Canada as a COUPLE and he will have to first get that visa straightened out and then ask for an OPEN work permit after that or at the same time. Once he gets that work permit, he can look for a suitable job near by.
