FAB, I have been thru such a situation and hence can relate to your dilemma. We all understand life offers such challenges good or bad. Basically, you seem to have a good work life and family life in Canada....
So take life in chunks of 5 yrs and deeply analyse the sitution in Canada 5 yrs down the line and compare it with 5yrs in ME or any other place. If the answer you get meets ur parameters then take a call, but my suggestion is dont re-visit this question every day or so often, give ur self 5 yrs in a situation and then review. I would even suggest when you commit urself to living in one location then stop looking at options in other locations unless your condition changes by doing so you will avoid lot of misery and tension.
Please note you may not be able to get 10/10 on all parameters all life long, but as long as you make a plan and stick to it,this will give u happiness and no regrets.

No, I dont have any debts (except car finance), but not alot of equity either, sold my home recently (break even price, the intentions were to buy bit bigger and closer to the job), currently renting, which is a plus in this situation.

Is this really such a tough decision? It is VERY subjective like someone else mentioned, but not really difficult in my opinion.
"Savings", which sounds like the only pro, is hardly a pro unless there's a specific goal associated with it (say "retiring early", or "buying a really big house" or "sending kid to harvard" etc.). Once you quantify the goal, ask yourself whether your goal(s) is /are
1. Achievable with your current compensation over here.
2. If not, important enough to risk the stability you're enjoying and the family time you obviously value.
Since the question is "What would you do", my answer is I would not move with this offer. Pretty easy call as far as I'm concerned. The added compensation is not enough to make up for the volatility it introduces, especially in the ME (you do know they pay these kind of salaries for a good reason, they're aware of the shortcomings of the lifestyle they offer there and NEED to pay this to attract talent).

I have lived in dubai for 20yrs and work for govt hospital. Pls verity with company is it 16000 kd p/m. life is taugh there if ur not provide housing one bed room apartment in proper city like bur-dubai cost u Dhs 65000 a yr. all my friend complain about food cost gone up and school fees is killing. u may not like to live in city like Ras al khaima or ajman. city like dubai and abudhabi r best rest all not up to the mark.
The worst thing u can fire from job any time and will face mental stress.since u have to leave country if u don't fine other job since u can not be legaly resident of the country how many year u leave.

Stress level is so high with your job security.
Especially my 15 years in Abu dhabi with US gaint engg consultants...
It was fine as long as you have job, the day you dont have job you are no where and start packing things to airport.. (that is what i call stress).
But for a single person with out family it is easy to move arround.
once you have school goin kids then you will understand the issue very clear.
Still i can say that Oil and gas has much better paid jobs in ME.
