Thanks Pramod Chopra, rajacanada & Suba for your help. I've decided to send an Xpresspost envelope - that seems to be the best option.
What if you dont return the passport.
Then when you go to india you can show your passport and dont need to get a visa.

I was in the same situation morning_rain two months ago... had both indian and canadian passports. I had to visit India last month. To apply for indian visa, I had sent both the passports to consulate. In return, I received the cancelled indian passport and visa stamped canadian passport. During travel to India, I had kept both the passports and citizenship card just in case someone asked for. During the trip, canadian passport was always looked at. No one asked for indian passport (but still I suggest visitors to carry it). At London, I was asked to show my citizenship card also.

How will they know that you have taken Canadian citizenhsip
Here is how they would know:
1. U will enter with your Indian passport. They will see no valid visa and question you about it and you will eventually get busted!
2. Even if they do not ask this and if you are able to get into the country, I am assuming that you will eventually want to return to Canada.
3. Here if you show Indian passport, you (most probably) will not have a valid visa to Canada and neither will you be able to get one (being a cdn citizen). Here they will not let you board the flight to Canada in which case you will get stuck in India.
4. If you show the cdn passport (without Indian visa), the exit control officer will ask you about how you entered India without a visa and then you will have to deal with Indian police/arrest/jail......U r busted here!
If you become Canadian citizen, you surrender your PR card. If you show Indian passport, you will have to show Canadian PR card, something you will not have as Canadian citizen. It is highly unlikely you will be able to enter India on the basis of Indian passport alone.
Officials in India at Immigration would also check each and every document required for travel.
